Cashew Green Goddess Dressing

1/2 tablespoon cashews, soaked and drained

1/2 cup fresh herbs (choose any combo of basil parsley, dill, mint leaves and tarragon)

2 tablespoons extra virgin olive oil

1 tablespoons lemon juice

1 tablespoon apple cider vinegar or sherry vinegar

1 clove garlic

1 tablespoon Dijon mustard

1/4 teaspoon sea salt, or more to taste

1/8 teaspoon freshly cracked pepper

1/3 cup water, or more to thin out dressing to desired consistency

Method

Add all dressing ingredients to a high powered blender and puree until smooth. Consistency should be creamy and pourable
